Lollipop Recipe

Makes 12 4” suckers or 2+ # rock candy
3 ¾ cups sugar
1 ½ cups light corn syrup
1 cup water
2 tbs. flavored oil food coloring

Mix sugar, syrup and water together in a large saucepan. Set to medium. Heat and stir until mixture is dissolved. NO MORE STIRRING! When mixture comes to a boil, put in candy in thermometer and reduce heat to medium. Cook to 300° or the hard crack stage (a few drops form brittle threads in cold water). Pull off heat and add food coloring and oil. Stir together well and pour into greased molds or into cookie sheet. (To make molds take a can and fold a piece of tin foil so it makes a circle.) Add fun candy to make faces and allow to harden. Enjoy.

Thanks to Shade’s experts, from Shades Café, we had the experience to make delicious giant lollipops of many flavors. They taught us to boil the ingredients at 300 degrees Fahrenheit. Always use a candy thermometer because the combination has to be the exact temperature; if it isn’t you could end up with a gummy substance instead of the delicious hard candy. We also learned if you don’t hold the lollipop stick still while your pouring the hot mixture your candy will be lop-sided.
